Saracina Sauvignon Blanc 2020

WINEMAKING & TASTING NOTES This is made from two vineyard sites: Lolonis and Chevalier vineyards, both Certified Organic. Grapes were hand-picked, whole-cluster pressed, and fermented with native yeast in neutral French oak barrels. The wine did not undergo malolactic fermentation and remained on the lees until bottling. This Sauvignon Blanc exhibits classic aromas of quince, white nectarine, evergreen and fresh cut grass notes. The palate is clean and invigorating, with flinty minerality. The wine has depth and concentration attributable to lees contact. Ideal with oysters on the half shell.
